This Niigata-based canelé specialty store is run by the owner-chef, who is a former pastry chef. In addition to the standard flavors such as plain, matcha, and cocoa, the store offers a wide variety of unique flavors such as black sesame and saikyo miso. The dough is made differently for each flavor, and the canelés are carefully baked after being aged at an ultra-low temperature for more than two days, resulting in a new chewy texture that is also recommended as a gift.
